Place the oysters on a support that stops them tipping over and losing water (salt, seaweed, indented plate)

Freshness

Check that the oysters are still alive (touch the mantle to see it move). Remove any dirty or dry oysters before serving

Avoid ice.
Ideal temperature 5°C to 15°C
