How to taste Marennes Oléron oysters
- Serving
- Place the oysters on a support that stops them tipping over and losing water (salt, seaweed, indented plate)
- Freshness
- Check that the oysters are still alive (touch the mantle to see it move).
- Remove any dirty or dry oysters before serving
- Temperature
- Avoid ice.
- Ideal temperature 5°C to 15°C
